Mixed Grain Bread

Whole Wheat and Rye Flour
With its high fiber content, rich nutritional value, and ability to stay fresh for a long time, this homemade bread adds health to your table with its intense aroma and texture.

Ingredients:
• 2 cups whole wheat flour
• 1 cup rye flour
• 1.5 cups lukewarm water
• 1 tablespoon olive oil
• 1 teaspoon salt
• 1 teaspoon honey
• 1 packet (10 grams) instant yeast
• 2 tablespoons mixed grains and seeds (such as flaxseeds, sunflower seeds, sesame)
• For topping (optional): Oats or sesame

Preparation:
1. Mix the lukewarm water, honey, and yeast, and let it sit for about 5 minutes.
2. In a large bowl, mix the flours, salt, and seeds. Make a well in the center and add the yeast mixture and olive oil.
3. Knead for 8-10 minutes until you get a sticky but cohesive dough.
4. Cover the dough and let it rest in a warm place for about 1 hour, until it doubles in size.
5. Once the dough has risen, punch it down, shape it into a loaf, and place it in a baking pan lined with parchment paper.
6. Cover the dough again and let it rest for another 30 minutes. Lightly dampen the top and sprinkle oats or sesame as desired.
7. Bake in a preheated 200°C (392°F) oven for 35-40 minutes. The bread is done when it sounds hollow when tapped on the bottom.

Serving and Storage Suggestions:
It can be served warm, drizzled with olive oil or butter.
It stays fresh for 3-4 days if stored in a cloth bag or airtight container.
For longer storage, it can be sliced and frozen.
