Whole Wheat or Rye Banana Bread
Ingredients:
• 2 ripe bananas (mashed)
• 2 eggs
• 1/3 cup olive oil
• 1/2 cup honey or brown sugar
• 1 teaspoon cinnamon
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1.5 cups whole wheat flour or rye flour
• Optional: Walnuts, chocolate chips, vanilla
Preparation:
1. First, mash the bananas and mix them with the eggs, olive oil, and honey/brown sugar in a bowl.
2. In a separate bowl, combine the dry ingredients (flour, baking powder, baking soda, cinnamon).
3. Add the dry mixture to the wet mixture and stir until it reaches a smooth consistency. Optional ingredients can be added at this stage.
4. Pour the mixture into a greased or parchment paper-lined loaf pan and bake in a preheated oven at 170°C (340°F) for approximately 40–45 minutes.
5. Once the banana bread is out of the oven, let it cool to room temperature and slice it for serving.
Tip: You can adjust the flour ratio to suit your taste. For example, using 70% whole wheat flour and 30% rye flour will give a more balanced texture and flavor.
Usage Suggestion: You can enjoy it as a healthy snack alternative during breakfast or coffee breaks.
